Caramel Apple Pie Cookies
Ingredients
2 refrigerated pie crusts
1 11.5 ounce jar caramel sauce
1 20 ounce can apple pie filling
1 egg, lightly beaten
1/4 cup sugar
1 tablespoon ground cinnamon
2 tablespoons flour for sprinkling
Directions
Preheat oven to 350°F.
Sprinkle one half tablespoon of flour on a clean work surface. Roll out the dough approx. 1.5 inches to slightly increase the surface area and smooth bumps.
Spread a thin film of caramel sauce over the crust.
Chop up the apple pie pieces to 1/4 inch segments. Spread apple pie filling over the caramel sauce.
Sprinkle a little flour on your clean work surface and again roll the dough out very slightly. Use either a pastry cutter or a knife to cut strips about 1/2 inch wide.Using the strips, make a lattice over the top of the pie, laying down evenly spaced horizontal strips and then pulling back every other strip to lay down a vertical strip. Repeat with alternating horizontal stripes until a lattice is formed, or simply lay down horizontal and vertical strips to form a criss-cross pattern.
Get out a 3 inch round cookie cutter and cut out the caramel apple pie cookies. Use a thin spatula to carefully transfer the cookies over to a non-stick baking sheet.
Brush a little of the egg across the strips on the cookies. Sprinkle with cinnamon and sugar. Bake for 20-25 minutes until golden brown.
The leftover scraps can be baked, too!
Makes approximately 1 dozen cookies.
